Tofu meatballs: A climate-friendly and healthy alternative

Ingredients:

  • 400 g tofu (natural, firm)
  • 1 small onion, finely diced

  • 2 tbsp soy sauce
  • 2 tbsp tomato puree
  • 1 tsp mustard
  • 1 tsp paprika powder (sweet)
  • 1 tsp cumin (optional)
  • 1 tsp dried herbs (e.g. thyme or oregano)
  • 3-4 tbsp breadcrumbs
  • 1 egg (or 2 tbsp linseed flour mixed with 6 tbsp water as a vegan alternative)
  • Salt and pepper to taste
  • Oil for frying

Preparation:

1. prepare the tofu:
Start by draining the tofu well and blotting off any excess liquid with a kitchen towel. Mash the tofu in a bowl with a fork or potato masher until it is finely crumbled.

2. sauté the vegetables:
Sauté the diced onion and chopped garlic in a pan with a little oil until translucent. Add the grated carrot and fry briefly.

3. mix the mixture:
Add the onion and carrot mixture to the mashed tofu. Add the soy sauce, tomato puree, mustard, paprika powder, cumin and dried herbs. Mix well and season to taste with salt and pepper.

4 Add the binding agent:
Mix the breadcrumbs and egg (or the linseed and water mixture) into the tofu mixture. Stir until a malleable mixture is formed. If necessary, add a little more breadcrumbs if the mixture is too moist.

5. form meatballs and fry:
Shape the mixture into small balls or meatballs. Heat some oil in a pan and fry the tofu meatballs over a medium heat until golden brown on all sides. This will take about 3-4 minutes per side.

6. serve:
Drain the meatballs on kitchen paper and serve warm. They go perfectly with side dishes, in wraps, salads or simply with a delicious sauce.
